Pops' Beet Salad w/ Lemon Vinaigrette
1lb of Beet Bombs or Pickled Baby Beets, chopped
1 cup English Cucumber, chopped
5 Green Onions, sliced thin
1/2 cup Carrots, shredded
1/2 cup Yellow Pepper, chopped
1/2 cup Shallot, chopped
1/4 cup Radish, chopped fine
3/4 cup Fresh Parsley, chopped fine
3 tbsp Olive Oil
3 tbsp Fresh Lemon Juice
2 tsp Lemon Zest
1 Garlic Clove, minced
1/4 tsp Sea Salt, fine
Make the Lemon Vinaigrette first by combining and whisking the olive oil, lemon juice, lemon zest, garlic, and sea salt. Mix all the remaining salad ingredients with the vinaigrette and enjoy.
